News 02/11/2002 : Baja Fresh Opens Second Location in the Carolinas Baja Fresh, one of the nation’s hottest new restaurant concepts, has finally opened its doors in Raleigh. The site, located at Townridge Shopping Center on Glenwood Avenue, had been under negotiation for over a year. Baja’s first location, in Greensboro, has been cranking out its famous Mexican fare for months, and word quickly spread to the Triangle. Marty Kotis of Kotis Real Estate Services (CIRB Carolinas Member) explains, “As real estate representatives of the concept, we were constantly being asked when Baja Fresh would be coming to Raleigh. People would visit the location in Greensboro, and beg us to put a store to Raleigh. The reception was amazing.” Baja Fresh has been nationally recognized for its innovative approach to Mexican food since its inception in California over 5 years ago, and its growth has been tremendous. In fact, the chain now boasts over 120 locations worldwide, with 2 here in North Carolina. But it won’t stop there. “We already working on additional sites in Raleigh, Winston-Salem, and Cary, “ adds Jeff Nimmer, a Development Associate at KRES. “I’m confident that you’ll see at least 5 more Baja Freshs’ open by Summer of next year.”
